    Irish Irish Stew – Traditional Lamb and Potato Stew

    A hearty, warming dish made with tender lamb, potatoes, carrots, and onions simmered slowly to create a rich and comforting stew.

    Ingredients (Serves 4):

    * 700g lamb shoulder or neck, cut into chunks
    * 4 large potatoes, peeled and diced
    * 3 carrots, sliced
    * 2 onions, chopped
    * 1 liter lamb or beef stock
    * 2 tbsp flour
    * Salt and pepper
    * Fresh parsley for garnish

    Instructions:

    1. Toss lamb chunks in flour seasoned with salt and pepper.
    2. Brown lamb in a heavy pot over medium heat. Remove and set aside.
    3. Sauté onions until translucent. Return lamb to pot, add carrots and potatoes.
    4. Pour in stock and bring to a simmer. Cover and cook gently for 1.5–2 hours until meat is tender.
    5. Season to taste, garnish with parsley and serve.

    Irish Tip:
    Serve with soda bread for a true traditional experience.
