Italian Cozze alla Tarantina โ€“ Spicy Mussels in Tomato Sauce

A southern Italian (Apulian) specialty: mussels quickly cooked in a spicy garlic-tomato sauce with parsley and served with grilled bread to mop up the sauce.

Ingredients (Serves 2โ€“3):

* 1kg fresh mussels, cleaned
* 3 cloves garlic, minced
* 200g cherry tomatoes or crushed tomatoes
* 1 small chili pepper, chopped (optional)
* 1 glass white wine
* Olive oil, salt, parsley

Instructions:

1. In olive oil, sautรฉ garlic and chili until fragrant. Add tomatoes and simmer briefly.
2. Add mussels and white wine. Cover and steam until mussels open (5โ€“7 minutes).
3. Discard unopened mussels. Sprinkle with chopped parsley.
4. Serve hot with grilled bread.
