Authentic Nigerian Jollof Rice with Spicy Tomato Sauce

    Ingredients:

2 cups long grain parboiled rice

    1/4 cup vegetable oil

    1 medium onion, chopped

    1 red bell pepper

    2 large tomatoes

    2 tablespoons tomato paste

1 scotch bonnet pepper (or to taste)

    2 cloves garlic

    1-inch piece fresh ginger

    1 teaspoon thyme

    1 teaspoon curry powder

    1 teaspoon paprika

2 bouillon cubes (Maggi or Knorr)

Optional: sliced onions, peas, or cooked mixed vegetables for garnish

    Directions:

Rinse rice thoroughly and set aside.

Blend red bell pepper, tomatoes, scotch bonnet, garlic, and ginger into a smooth paste.

In a large pot, heat oil and sauté chopped onions until translucent.

Add tomato paste and fry for 2–3 minutes to reduce acidity.
