    Tropical Fresh Papaya Jam with Lime and Vanilla

    Ingredients:

    4 cups ripe papaya, peeled, deseeded, and diced

    2 cups granulated sugar

    2 tablespoons lime juice

    1 teaspoon lime zest

    1/2 teaspoon vanilla extract

    1/4 cup water

    Directions:

    In a heavy-bottomed saucepan, combine diced papaya, sugar, water, lime juice, and lime zest.

    Stir over medium heat until the sugar has dissolved completely.

    Bring to a gentle boil, then lower heat and simmer uncovered for 30–40 minutes, stirring often.

    Use a potato masher or hand blender to achieve your desired texture—chunky or smooth.

    Stir in vanilla extract during the last 5 minutes of cooking.

    Once the jam thickens to your liking, remove from heat and let cool slightly.
