    Mediterranean Chickpea Salad with Feta, Olives, and Fresh Herbs

    Ingredients:

    1 can (15 oz) chickpeas, drained and rinsed

    1 cup cherry tomatoes, halved

    1/2 cucumber, diced

    1/4 red onion, thinly sliced

    1/2 cup Kalamata olives, halved

    1/3 cup crumbled feta cheese

    2 tablespoons chopped fresh parsley

    1 tablespoon chopped fresh mint (optional)

    For the Dressing:

    3 tablespoons extra virgin olive oil

    1 tablespoon red wine vinegar

    1 teaspoon Dijon mustard

    Juice of half a lemon

    1 garlic clove, minced

    Salt and black pepper, to taste

    Directions:

    In a small bowl or jar, whisk together olive oil, red wine vinegar, mustard, lemon juice, garlic, salt, and pepper until well emulsified.

    In a large mixing bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, feta, parsley, and mint.

    Pour the dressing over the salad and toss gently to combine.

    Let the salad sit for 10–15 minutes before serving to allow flavors to meld.

    Serve chilled or at room temperature.

    Ingredients:

    1 cup couscous

    1 cup boiling water

    1 can (15 oz) chickpeas, drained and rinsed

    1/2 cup cucumber, diced

    1/2 cup cherry tomatoes, halved

    1/4 cup red onion, finely chopped

    1/4 cup fresh parsley, chopped

    1/4 cup fresh mint, chopped

    1/4 cup raisins or chopped dried apricots

    1/4 cup toasted almonds or pine nuts

    2 tablespoons olive oil

    Juice of 1 lemon

    1 teaspoon ground cumin

    1/2 teaspoon ground cinnamon

    Salt and pepper to taste

    Directions:

    Place couscous in a large bowl and pour boiling water over it. Cover and let sit for 5-7 minutes until water is absorbed. Fluff with a fork.
