    Creamy Coconut-Infused Butternut Squash Soup

    Ingredients:

    1 medium butternut squash, peeled and cubed (about 4 cups)

    1 tablespoon olive oil

    1 onion, chopped

    2 cloves garlic, minced

    1 can (14 oz) coconut milk

    3 cups vegetable broth

    Directions:
