Slow-Roasted Cherry Tomato Pasta with Garlic, Olive Oil & Fresh Basil

    Ingredients:

500g (1 lb) cherry or grape tomatoes

    3 tablespoons olive oil

4 cloves garlic, peeled and smashed

Salt and black pepper, to taste

1/4 teaspoon red chili flakes (optional)

300g (10 oz) spaghetti or linguine

1/2 cup freshly grated Parmesan cheese (plus more for serving)

1/4 cup chopped fresh basil (plus whole leaves for garnish)

Optional: balsamic glaze or lemon zest for finishing

    Directions:

    Preheat oven to 400°F (200°C).
