• Spicy Sausage Ragu

    Hearty Spicy Sausage Ragu with Tomatoes and Red Wine

    Ingredients:

    1 lb (450g) spicy Italian sausage, casings removed

    1 tablespoon olive oil

    1 small onion, finely chopped

    2 cloves garlic, minced

    1/2 teaspoon crushed red pepper flakes (adjust to heat preference)

    1/2 cup dry red wine

    1 can (28 oz) crushed tomatoes

    1 tablespoon tomato paste

    1 teaspoon dried oregano

    Salt and black pepper to taste

    1/4 cup chopped fresh basil (plus more for garnish)

    Grated Parmesan, for serving

    Cooked pasta (pappardelle or rigatoni), for serving

    Directions:

    In a large skillet or saucepan, heat olive oil over medium heat. Add sausage and cook until browned, breaking it into crumbles.

    Add chopped onion and cook until softened, about 5 minutes. Stir in garlic and red pepper flakes; cook for 1 minute until fragrant.

    Pour in red wine, scraping the bottom of the pan to deglaze. Simmer for 2–3 minutes to reduce slightly.

    Stir in crushed tomatoes, tomato paste, oregano, salt, and black pepper. Bring to a gentle simmer.

    Reduce heat and simmer uncovered for 25–30 minutes, stirring occasionally, until thickened.

    Stir in chopped fresh basil just before serving.

    Serve hot over cooked pasta, topped with grated Parmesan and extra basil if desired.

  • Nắng nóng làm ly trà bí đao cái mát rượi khỏi đội nón luôn mọi người ơi!

    Mua trái bí đao của miền Bắc to lắm, mà nấu trà bí đao thì đúng nên chọn bí trái to dài này nhen, nấu thơm ngon và không bị chua kiểu như bí trái nhỏ.
    Bí đao thì có quá nhiều lợi ích trong việc thanh nhiệt cơ thể và bổ sung năng lượng.
    Râu bắp(ngô) chứa vitamin A, vitamin C làm đẹp da hỗ trợ thanh nhiệt.
    Nguyên liệu:
    - 1 Trái Bí Đao miền Bắc
    - 100gr râu bắp (ngô)
    - 15 trái táo tàu
    - 2 trái la hán quả
    - 2 cây lá dứa( lá nếp)
    - 300gr đường phèn
    Cách thực hiện:
    - Râu bắp về rửa sạch để ráo nước;
    - La Hán Quả rửa sạch đập dập;
    - Lá dứa rửa sạch, vò cho ra tinh dầu, lá dứa sẽ bỏ vào sao đoạn bí đao đã chín mềm, giúp nước thơm hơn;
    - Bí đao rửa sạch bên ngoài rồi dùng dao bào, bào lớp vỏ xanh bên ngoài, vẫn giữ lại phần vỏ này nhé, vỏ giúp màu nước đẹp hơn. Cắt bí thành khúc tròn chiều dài tầm 5cm và chẻ nhỏ thành từng miếng, sỡ dĩ gọi là chẻ vì giống bí này vỏ cứng lắm, mình toàn dùng lực mạnh, chứ cắt bình thường là không nổi.
    - Cho tất cả nguyên liệu vào nồi, ngoại trừ đường phèn và lá dứa, cho 3 lít nước vào nồi. Ở đây mình dùng nồi áp suất nên chọn mức áp suất thấp nhất, nấu trong 25 phút, sau khi kết thúc chu trình mình đừng vội xả van, vì nồi vẫn còn đang sôi sùng sục bên trong, cứ để như thế cho nồi xả tự động, mình tận dụng hơi nóng còn trong nồi để hầm bí đao lâu hơn nhé. Sau tầm 1 tiếng thì mình mở nắp cho đường phèn và lá dứa vào, khi này nước vẫn còn rất nóng nên mọi người không lo đường phèn không tan hết hay lá dứa không thơm nha.
    - Sau cùng là mình lọc qua rây rồi rót vào ly cho thêm chút đá hoặc thêm hạt chia vào uống cùng, dùng không hết mình cho vào chai bảo quản tủ lạnh uống được hôm sau luôn nhé!

    Cheesy Baked Ziti with Marinara and Ricotta

    Ingredients:

    1 lb ziti pasta

    1 tablespoon olive oil

    1 pound ground beef or Italian sausage

    1 small onion, diced

    3 cloves garlic, minced

    1 (28 oz) jar marinara sauce

    1 (15 oz) container ricotta cheese

    2 cups shredded mozzarella cheese, divided

    1/2 cup grated Parmesan cheese

    1 egg

    1 tablespoon chopped fresh basil or 1 teaspoon dried

    Salt and pepper to taste

    Fresh parsley (optional garnish)

    Directions:

    Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.

    Cook the ziti according to package directions until al dente. Drain and set aside.

    In a large skillet, heat olive oil over medium heat. Add onion and garlic and cook for 2–3 minutes.

    Add the ground beef or sausage and cook until browned. Drain excess fat.

    Stir in the marinara sauce and simmer for 5 minutes. Season with salt, pepper, and basil.

    In a bowl, mix ricotta cheese, 1 cup mozzarella, Parmesan, and egg until smooth.

    Toss the cooked pasta with half of the meat sauce.

    In the baking dish, layer half of the pasta mixture, spread the ricotta mixture evenly over it, then top with remaining pasta and sauce.

    Sprinkle remaining mozzarella cheese on top.

    Cover with foil and bake for 25 minutes. Remove foil and bake another 10–15 minutes, until cheese is bubbly and slightly browned.

    Let rest 5 minutes before serving. Garnish with parsley if desired.
