  • Icelandic Plokkfiskur – Mashed Fish & Potato Casserole

    A Nordic comfort dish, Plokkfiskur combines flaked white fish with creamy mashed potatoes and béchamel sauce, often served with dark rye bread and butter.

    Ingredients (Serves 4):

    * 400g white fish (cod, haddock), poached and flaked
    * 500g potatoes, boiled and mashed
    * 1 small onion, finely chopped
    * 30g butter
    * 2 tbsp flour
    * 300ml milk
    * Salt, white pepper, parsley

    Instructions:

    1. Make a roux with butter and flour, whisk in milk to form a smooth sauce.
    2. Add onion and cook until tender.
    3. Stir in mashed potatoes and flaked fish. Mix until heated through.
    4. Season with salt, pepper, and garnish with parsley.
    5. Serve with rye bread and butter.

    Icelandic Tip:
    This dish is even better the next day, reheated in a skillet with a crispy crust.
