    Tropical Pineapple Coconut Banana Bread Loaf

    Ingredients:

    3 ripe bananas, mashed

    1 cup crushed pineapple, drained

    1/2 cup shredded coconut (sweetened or unsweetened)

    1/2 cup granulated sugar

    1/4 cup brown sugar

    2 large eggs

    1/3 cup vegetable oil or melted coconut oil

    1 teaspoon vanilla extract

    1 1/2 cups all-purpose flour

    1 teaspoon baking soda

    1/2 teaspoon salt

    1/2 teaspoon ground cinnamon (optional)

    Directions:

    Preheat oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

    In a large bowl, combine mashed bananas, crushed pineapple, shredded coconut, granulated sugar, brown sugar, eggs, oil, and vanilla extract. Mix well.

    In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.

    Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Do not overmix.

    Pour batter into the prepared loaf pan and smooth the top.

    Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.

    Allow bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
