Tortilla Española with Chorizo

Ingredients:
- 4 medium potatoes, peeled and thinly sliced
- 1 large onion, finely chopped
- 4 large eggs
- 150g chorizo, diced
- Salt, to taste
- Olive oil, for frying

Preparation Steps:
1. In a large skillet, heat olive oil over medium heat.
2. Add the sliced potatoes and chopped onion; cook until the potatoes are tender, about 15 minutes.
3. Meanwhile, in a separate pan, sauté the diced chorizo until it releases its oils and is slightly crispy.
4. In a large bowl, beat the eggs and season with salt. Add the cooked potatoes, onions, and chorizo to the egg mixture; stir to combine.
5. Wipe the skillet clean and add a little more olive oil. Pour in the egg and potato mixture, spreading it evenly.
6. Cook over low heat for about 5-7 minutes, or until the bottom is set.
7. Carefully flip the tortilla using a large plate and cook the other side for another 5-7 minutes.
8. Once fully cooked, slide the tortilla onto a serving plate and let it cool slightly before slicing.
