Juicy Marinated Grilled Beef Kabobs with Veggies

Ingredients:

1 1/2 lbs beef sirloin or ribeye, cut into 1 1/2-inch cubes

1 red bell pepper, cut into chunks

1 green bell pepper, cut into chunks

1 red onion, cut into wedges

1 zucchini, sliced thick

8 oz button mushrooms, whole or halved

Metal or soaked wooden skewers

Marinade:

1/3 cup olive oil

3 tablespoons soy sauce

2 tablespoons Worcestershire sauce

1 tablespoon red wine vinegar or lemon juice

2 garlic cloves, minced

1 tablespoon brown sugar

1 teaspoon dried oregano

1/2 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)

Directions:

In a bowl, whisk together all marinade ingredients. Add beef cubes, toss to coat, cover, and refrigerate for at least 1 hour (or overnight for deeper flavor).

Preheat grill to medium-high heat.

Thread marinated beef, bell peppers, onion, zucchini, and mushrooms onto skewers, alternating for color and texture.

Grill skewers 10–12 minutes, turning every few minutes, until beef is cooked to desired doneness and veggies are lightly charred.

Remove from grill, rest 5 minutes, and serve warm with rice, pita, or a fresh salad.
