    Tropical Fresh Papaya Jam with Lime and Vanilla

    Ingredients:

    4 cups ripe papaya, peeled, deseeded, and diced

    2 cups granulated sugar

    2 tablespoons lime juice

    1 teaspoon lime zest

    1/2 teaspoon vanilla extract

    1/4 cup water

    Directions:

    In a heavy-bottomed saucepan, combine diced papaya, sugar, water, lime juice, and lime zest.

    Stir over medium heat until the sugar has dissolved completely.
