Flan de Coco
Ingredients:
- 1 can (14 oz) coconut milk
- 1 can (14 oz) sweetened condensed milk
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup sugar (for caramel)
- 1/4 cup water (for caramel)
Preparation Steps:
1. Preheat your oven to 350°F (175°C).
2. In a saucepan, combine sugar and water over medium heat. Stir until sugar dissolves and turns golden brown.
3. Quickly pour the caramel into a round baking dish, tilting to coat the bottom evenly.
4. In a mixing bowl, whisk together coconut milk, sweetened condensed milk, eggs, and vanilla extract until smooth.
5. Pour the coconut mixture over the caramel in the baking dish.
6. Place the baking dish in a larger baking pan and fill the larger pan with hot water until it reaches halfway up the sides of the flan dish.
7. Bake for 50-60 minutes or until the flan is set.
8. Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours.
9. To serve, run a knife around the edges and invert the flan onto a serving plate.
