    1 medium onion, finely chopped

    1 teaspoon sugar

    1/2 teaspoon ground coriander

    1/4 teaspoon ground black pepper

    Directions:

    Place the julienned carrots in a large bowl and sprinkle with salt. Let sit for 10–15 minutes to release some moisture.
