Ingredients:
1 ½ lbs boneless chicken thighs, cut into chunks
1 tablespoon oil (coconut or vegetable)
1 large onion, finely chopped
3 garlic cloves, minced
1 inch fresh ginger, grated
2 tablespoons curry powder
1 teaspoon ground turmeric
1 teaspoon paprika
1 can (14 oz) full-fat coconut milk
1 cup chicken broth
1 tablespoon tomato paste
Salt and pepper to taste
Juice of ½ lime
Fresh cilantro, chopped (for garnish)
Cooked basmati rice, to serve
Directions:
Heat oil in a large skillet or pot over medium heat. Add chopped onions and sauté until softened and golden, about 5–7 minutes.
