Beef and Squash Medley
Savory Ground Beef and Roasted Squash Skillet
Ingredients:
1 lb (450g) ground beef
1 tablespoon olive oil
1 yellow onion, chopped
2 garlic cloves, minced
1 zucchini, chopped
1 yellow squash, chopped
1/2 teaspoon dried thyme
1/2 teaspoon smoked paprika
Salt and pepper to taste
1 tablespoon tomato paste
1/4 cup beef broth or water
1 tablespoon chopped fresh parsley (optional)
Directions:
Heat olive oil in a large skillet over medium heat. Add onion and cook for 3–4 minutes until soft.
Add garlic and cook for another 30 seconds.
Add ground beef and cook, breaking it up with a spoon, until browned and fully cooked, about 6–8 minutes.
Stir in tomato paste, thyme, paprika, salt, and pepper. Mix well.
Add zucchini and yellow squash. Cook for 5–6 minutes, stirring occasionally, until vegetables are tender.
Pour in beef broth and let simmer for 3 minutes, allowing the flavors to meld and liquid to reduce slightly.
Garnish with chopped parsley before serving.
