Strawberry Shortcake
Ingredients:
- 2 cups fresh strawberries, hulled and sliced
- 3 tablespoons sugar
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, cold and cubed
- 1 cup heavy cream
- 1 teaspoon vanilla extract
Preparation Steps:
1. In a bowl, mix sliced strawberries with 1 tablespoon sugar. Let sit to macerate for about 30 minutes.
2. Preheat your oven to 400°F (200°C).
3. In another bowl, combine flour, baking powder, salt, and remaining sugar.
4. Add the cold cubed butter and mix until the mixture resembles coarse crumbs.
5. Stir in heavy cream and vanilla extract until just combined.
6. Turn the dough onto a floured surface and gently knead a few times before flattening into a 1-inch thick round.
7. Cut out shortcakes using a biscuit cutter and place them on a baking sheet.
8. Bake for 15-20 minutes or until golden brown.
9. Let shortcakes cool slightly before slicing in half.
10. Layer each shortcake with the macerated strawberries and whipped cream if desired.
