    Buttery Puff Pastry Sausage Rolls with Caramelized French Onions

    Ingredients:

    1 tablespoon olive oil

    2 large yellow onions, thinly sliced

    1/2 teaspoon salt

    1 teaspoon sugar

    1 tablespoon balsamic vinegar

    1 lb (450g) pork sausage meat

    1/2 teaspoon dried thyme

    1/4 teaspoon black pepper

    1 sheet puff pastry (thawed if frozen)

    1 egg, beaten (for egg wash)

    Optional: sesame seeds or poppy seeds for topping

    Directions:

    In a large skillet, heat olive oil over medium heat. Add sliced onions and salt. Cook for 15 minutes, stirring often.

    Add sugar and balsamic vinegar, and continue cooking for another 10-15 minutes, until onions are deeply caramelized. Let cool.

    In a bowl, combine sausage meat, thyme, black pepper, and cooled onions. Mix until evenly incorporated.

    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Roll out the puff pastry into a rectangle. Place the sausage mixture in a log shape down the center.

    Fold over the pastry to encase the filling, sealing the edge with a bit of beaten egg.

    Cut into 6-8 rolls and place seam-side down on the baking sheet. Brush with egg wash and sprinkle with optional seeds.

    Bake for 25–30 minutes, or until golden brown and cooked through. Serve warm.
