    A southern Italian (Apulian) specialty: mussels quickly cooked in a spicy garlic-tomato sauce with parsley and served with grilled bread to mop up the sauce.

    Ingredients (Serves 2–3):

    * 1kg fresh mussels, cleaned
    * 3 cloves garlic, minced
    * 200g cherry tomatoes or crushed tomatoes
    * 1 small chili pepper, chopped (optional)
    * 1 glass white wine
    * Olive oil, salt, parsley

    Instructions:

    1. In olive oil, sauté garlic and chili until fragrant. Add tomatoes and simmer briefly.
    2. Add mussels and white wine. Cover and steam until mussels open (5–7 minutes).
    3. Discard unopened mussels. Sprinkle with chopped parsley.
    4. Serve hot with grilled bread.

    Add a splash of lemon juice or white wine vinegar for brightness before serving.

    Tropical Thai-Inspired Beef & Pineapple Curry Delight

    Ingredients:

    1 lb beef sirloin or flank steak, thinly sliced

    1 tablespoon vegetable oil

    1 medium onion, chopped

    3 cloves garlic, minced

    1 tablespoon fresh ginger, grated

    2 tablespoons red curry paste

    1 can (13.5 oz) coconut milk

    1 cup beef broth

    2 tablespoons fish sauce

    2 tablespoons brown sugar

    1 1/2 cups fresh pineapple chunks (or canned, drained)

    1 red bell pepper, sliced

    1 green bell pepper, sliced

    1 tablespoon lime juice

    Fresh cilantro and Thai basil, for garnish

    Cooked jasmine rice, for serving

    Directions:

    Heat oil in a large skillet or wok over medium-high heat. Add the beef and sear until browned. Remove and set aside.

    In the same pan, sauté onions until soft, about 3 minutes. Add garlic and ginger and cook for another minute.

    Stir in red curry paste and cook for 1-2 minutes until fragrant.

    Pour in coconut milk and beef broth, stirring to combine. Add fish sauce and brown sugar.

    Return beef to the pan along with pineapple chunks and bell peppers. Simmer for 10–12 minutes, or until the beef is tender and the sauce has thickened slightly.

    Stir in lime juice. Taste and adjust seasoning if necessary.

    Serve hot over jasmine rice and garnish with fresh cilantro and Thai basil.
