Italian Cozze alla Tarantina – Spicy Mussels in Tomato Sauce
A southern Italian (Apulian) specialty: mussels quickly cooked in a spicy garlic-tomato sauce with parsley and served with grilled bread to mop up the sauce.
Ingredients (Serves 2–3):
* 1kg fresh mussels, cleaned
* 3 cloves garlic, minced
* 200g cherry tomatoes or crushed tomatoes
* 1 small chili pepper, chopped (optional)
* 1 glass white wine
* Olive oil, salt, parsley
Instructions:
1. In olive oil, sauté garlic and chili until fragrant. Add tomatoes and simmer briefly.
2. Add mussels and white wine. Cover and steam until mussels open (5–7 minutes).
3. Discard unopened mussels. Sprinkle with chopped parsley.
4. Serve hot with grilled bread.
Italian Tip:
Add a splash of lemon juice or white wine vinegar for brightness before serving.
