Liechtenstein Käsknöpfle mit Speck – Cheese Noodles with Bacon
A hearty Alpine dish from Liechtenstein and its neighbors, made from small homemade pasta (Spätzle-style), mixed with melted cheese and topped with crispy bacon and caramelized onions.
Ingredients (Serves 4):
* 300g flour
* 3 eggs
* 100ml milk
* 200g grated Emmental or Gruyère cheese
* 150g smoked bacon or speck, diced
* 1 onion, thinly sliced
* Salt, butter, nutmeg
Instructions:
1. Mix flour, eggs, milk, salt, and nutmeg into a sticky dough.
2. Press through a spätzle maker into boiling salted water. Cook until they float.
3. Drain and layer noodles with grated cheese in a baking dish.
4. Fry bacon and onions until crisp. Pour over noodles.
5. Bake at 180°C (350°F) for 10–15 minutes until cheese is melted.
Liechtenstein Tip:
Serve with apple compote for a sweet-salty contrast.
