Crème Brûlée
Ingredients:
- 2 cups heavy cream
- 1 teaspoon vanilla extract
- 4 large egg yolks
- 1/2 cup granulated sugar (plus extra for topping)
- A pinch of salt
Preparation Steps:
1. Preheat your oven to 325°F (160°C).
2. In a saucepan, heat the cream and vanilla over medium warmth until it begins to steam. Do not boil.
3. In a bowl, whisk together egg yolks, sugar, and salt until smooth and slightly pale.
4. Gradually pour the hot cream mixture into the egg mixture, whisking continuously to temper the eggs.
5. Strain the mixture through a fine-mesh sieve into a pitcher to remove any lumps.
6. Pour the mixture into ramekins, filling them about 3/4 full.
7. Place the ramekins in a baking dish and add hot water to the dish, halfway up the sides of the ramekins.
8. Bake for 30-35 minutes, or until the edges are set but the center still jiggles slightly.
9. Remove from the oven and let cool before refrigerating for at least 2 hours or until chilled.
10. Just before serving, sprinkle a thin layer of sugar over the top of each custard.
11. Use a kitchen torch to caramelize the sugar until it forms a crispy top layer. Alternatively, broil in the oven on high for 1-2 minutes, watching carefully.
12. Let sit for a minute before serving for the best texture.
