Garden-Fresh Zucchini & Tomato Soup with Basil and Garlic

    Ingredients:

    2 tablespoons olive oil

    1 medium onion, chopped

    3 cloves garlic, minced

    3 medium zucchinis, sliced

4 ripe tomatoes, chopped (or one 14-oz can of diced tomatoes)

    3 cups vegetable broth

    1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

    Salt and pepper, to taste

    1/4 cup fresh basil, chopped
