• Chicken Tikka Wraps

    Grilled Chicken Tikka Wraps with Cooling Yogurt Sauce

    Ingredients:

    For the Chicken Tikka:

    1 lb (450g) boneless chicken thighs or breasts, cut into strips

    1/2 cup plain Greek yogurt

    2 tablespoons lemon juice

    1 tablespoon olive oil

    2 garlic cloves, minced

    1-inch piece of ginger, grated

    1 1/2 teaspoons ground cumin

    1 1/2 teaspoons ground coriander

    1 teaspoon smoked paprika

    1/2 teaspoon turmeric

    1/2 teaspoon cayenne pepper (optional)

    Salt to taste

    For the Wrap Assembly:

    4 large flour tortillas or flatbreads

    1/2 red onion, thinly sliced

    1 cup shredded lettuce or baby spinach

    1/2 cucumber, sliced

    1 tomato, thinly sliced

    Fresh cilantro leaves

    For the Yogurt Sauce:

    1/2 cup plain Greek yogurt

    1 tablespoon lemon juice

    1 tablespoon chopped mint or cilantro

    Salt and pepper to taste

    Directions:

    In a bowl, combine all marinade ingredients. Add chicken and mix well. Marinate for at least 1 hour, preferably overnight.

    Heat a grill pan or skillet over medium-high heat. Cook the marinated chicken for 8–10 minutes until fully cooked and slightly charred. Set aside.

    For the yogurt sauce, mix all ingredients in a small bowl. Chill until ready to use.

    Warm the tortillas or flatbreads.

    To assemble each wrap: layer lettuce or spinach, tomato, cucumber, and onion on the bread. Top with hot chicken, drizzle with yogurt sauce, and garnish with fresh cilantro.

    Roll tightly into a wrap. Serve immediately, or wrap in foil for an on-the-go meal.

    Creamy Smoked Salmon Pinwheels with Dill & Cucumber

    Ingredients:

    4 large flour tortillas or spinach wraps

    8 oz cream cheese, softened

    1 tablespoon fresh dill, chopped

    1 teaspoon lemon juice

    Salt and pepper, to taste

    6 oz smoked salmon

    1/2 cucumber, thinly sliced into strips

    1/4 red onion, thinly sliced (optional)

    Baby spinach or arugula leaves

    Directions:

    In a bowl, mix cream cheese with dill, lemon juice, salt, and pepper until smooth.

    Lay out tortillas and spread an even layer of the cream cheese mixture across each one.

    Layer smoked salmon slices, cucumber strips, optional red onion, and spinach leaves over the cream cheese.

    Tightly roll up each tortilla from one end to the other.

    Wrap each roll in plastic wrap and refrigerate for at least 30 minutes to set.

    Slice into 1-inch pinwheels and serve chilled.
