    Creamy Easy White Chicken Chili with Beans and Green Chiles

    Ingredients:

    1 tbsp olive oil

    1 medium onion, chopped

    2 garlic cloves, minced

    1 tsp ground cumin

    2 (15 oz) cans white beans, drained and rinsed

    1 (4 oz) can diced green chiles

    2 cups cooked shredded chicken (rotisserie works great)

    2 cups low-sodium chicken broth

    1/2 cup sour cream

    1/2 cup whole milk or half-and-half

    Salt and pepper to taste

    Juice of 1 lime

    Fresh cilantro, shredded cheese, and crushed tortilla chips for garnish

    Directions:

    Heat olive oil in a large pot over medium heat. Add onion and sauté for 3–4 minutes until softened.

    Stir in garlic, cumin, oregano, chili powder, and cayenne. Cook for 1 minute until fragrant.

    Add white beans, green chiles, shredded chicken, and chicken broth. Stir to combine.

    Bring to a simmer and cook for 15–20 minutes to meld flavors.

    Stir in sour cream and milk. Simmer for another 5 minutes without boiling.

    Add lime juice and season with salt and pepper to taste.

    Serve hot topped with cilantro, cheese, and tortilla chips.

    Directions:

    Place the beets in a large pot and cover with water. Bring to a boil and cook for 30–40 minutes, or until fork-tender.

    Drain the beets and let them cool enough to handle. Peel and slice into 1/4-inch rounds or wedges.

    In a saucepan, combine the vinegar, water, sugar, cinnamon, cloves, allspice, and salt. Bring to a gentle simmer, stirring until the sugar dissolves.

    Place the sliced beets (and red onion if using) in a sterilized glass jar.
