Spicy Black Pepper Chicken Stir-Fry with Bell Peppers and Onions

Ingredients:

1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 tablespoon dark soy sauce

1 tablespoon cornstarch

1/2 teaspoon sugar

2 tablespoons vegetable oil

1 tablespoon freshly ground black pepper (adjust to taste)

1 small onion, sliced

1 green bell pepper, sliced

1 red bell pepper, sliced

3 cloves garlic, minced

1-inch piece of ginger, minced

2 green onions, sliced (optional for garnish)

Directions:

In a bowl, mix chicken with soy sauce, oyster sauce, dark soy sauce, cornstarch, and sugar. Let marinate for at least 15 minutes.

Heat vegetable oil in a large skillet or wok over medium-high heat.

Add garlic and ginger and stir-fry until fragrant, about 30 seconds.

Add the marinated chicken and cook for 5โ€“7 minutes, stirring frequently, until the chicken is cooked through and slightly caramelized.

Add onions and bell peppers. Stir-fry for another 3โ€“4 minutes until vegetables are tender-crisp.

Sprinkle freshly ground black pepper over the dish and toss well to combine.

Garnish with sliced green onions and serve hot with rice.
