• Moroccan Spiced Banana Bread

    Fragrant Moroccan Banana Bread with Warm Spices and Orange Zest

    Ingredients:

    3 ripe bananas, mashed

    1/3 cup melted coconut oil or unsalted butter

    1/2 cup brown sugar

    2 large eggs

    1 teaspoon vanilla extract

    1 teaspoon orange zest

    1 1/2 cups all-purpose flour

    1 teaspoon baking soda

    1/2 teaspoon salt

    1 teaspoon ground cinnamon

    1/2 teaspoon ground ginger

    1/2 teaspoon ground cardamom

    1/4 teaspoon ground cloves

    1/4 teaspoon ground nutmeg

    1/3 cup chopped walnuts or pistachios (optional)

    1 tablespoon sesame seeds (for topping)

    Directions:

    Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line with parchment paper.

    In a large bowl, whisk together the mashed bananas, melted oil or butter, brown sugar, eggs, vanilla, and orange zest until smooth.

    In a separate bowl, mix flour, baking soda, salt, cinnamon, ginger, cardamom, cloves, and nutmeg.

    Slowly fold the dry ingredients into the wet mixture until just combined. Do not overmix.

    Stir in chopped nuts if using. Pour the batter into the prepared pan and smooth the top.

    Sprinkle sesame seeds evenly over the top of the batter.

    Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.

    Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

    Classic Honey-Walnut Baklava with Crisp Phyllo Layers

    Ingredients:

    For the baklava:

    1 package phyllo dough (16 oz), thawed

    2 cups walnuts, finely chopped

    1 cup pistachios, finely chopped

    1 teaspoon ground cinnamon

    1 cup unsalted butter, melted

    For the syrup:

    1 cup granulated sugar

    1 cup water

    1/2 cup honey

    1 tablespoon lemon juice

    1 cinnamon stick

    2 strips lemon peel

    Directions:

    Preheat oven to 350°F (175°C).

    In a bowl, mix walnuts, pistachios, and cinnamon.

    Brush a 9x13-inch baking dish with melted butter. Place one sheet of phyllo dough in the pan, brush with butter, and repeat until 8 layers are stacked.

    Sprinkle a thin layer of the nut mixture over the phyllo. Add 4 more phyllo layers (buttering each), then another layer of nuts. Repeat until all nuts are used. Finish with 8 more phyllo sheets on top, buttering each.

    Cut the unbaked baklava into diamond or square shapes with a sharp knife.

    Bake for 45–50 minutes, or until golden and crisp.
