Waldorf Turkey and Cranberry Salad
Fresh Waldorf Turkey Salad with Tart Cranberries and Crunchy Apples
Ingredients:
2 cups cooked turkey breast, shredded or diced
1 cup celery, thinly sliced
1 cup apples, diced (preferably Granny Smith or Fuji)
1/2 cup red grapes, halved
1/3 cup dried cranberries
1/2 cup walnuts, toasted and chopped
1/2 cup mayonnaise
1/4 cup plain Greek yogurt
1 tablespoon lemon juice
1 teaspoon honey
Salt and freshly ground black pepper, to taste
Mixed greens or lettuce leaves for serving
Directions:
In a large bowl, whisk together mayonnaise, Greek yogurt, lemon juice, honey, salt, and pepper until smooth and creamy.
Add shredded turkey, celery, apples, grapes, dried cranberries, and walnuts to the bowl. Toss gently to combine all ingredients evenly with the dressing.
Taste and adjust seasoning if necessary.
