Baobab Fruit Ice Cream
Creamy Baobab Superfruit Ice Cream with Citrus Zing
Ingredients:
1 cup baobab fruit pulp (fresh or rehydrated from powder)
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon vanilla extract
Pinch of salt
Directions:
In a blender, combine baobab pulp, lemon juice, vanilla extract, and sugar. Blend until smooth.
In a large bowl, whisk together heavy cream, milk, and salt. Stir in the blended baobab mixture.
Chill the mixture in the refrigerator for at least 2 hours or until very cold.
Pour the chilled mixture into your ice cream maker and churn according to manufacturer’s instructions (usually 20–25 minutes).
Transfer to a lidded container and freeze for 4 hours or until firm.
Scoop and serve with fresh fruit, candied citrus peel, or a drizzle of honey if desired.
