Creamy Tuscan Chicken
Succulent Chicken Breasts in a Rich Tuscan Garlic and Sun-Dried Tomato Sauce
Ingredients:
4 boneless, skinless chicken breasts
Salt and freshly ground black pepper, to taste
2 tablespoons olive oil
3 cloves garlic, minced
1 cup sun-dried tomatoes (packed in oil), chopped
1 cup heavy cream
1/2 cup chicken broth
1 teaspoon Italian seasoning
1/2 cup grated Parmesan cheese
2 cups fresh baby spinach
1 tablespoon butter
Fresh parsley, chopped (for garnish)
Directions:
Season chicken breasts with salt and pepper on both sides.
Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 5-6 minutes per side until golden brown and cooked through. Remove chicken and set aside.
In the same skillet, melt butter and sauté garlic until fragrant, about 1 minute.
Add chopped sun-dried tomatoes and cook for 2 minutes.
Pour in chicken broth and heavy cream, stirring to combine.
Stir in Italian seasoning and Parmesan cheese until sauce thickens slightly, about 3-4 minutes.
Add fresh spinach and cook until wilted.
Return chicken to the skillet and spoon sauce over the top. Simmer for 2-3 minutes to meld flavors.
Garnish with chopped parsley before serving.
