Mediterranean Chickpea and Feta Salad

Zesty Mediterranean Chickpea Salad with Feta, Herbs, and Lemon-Olive Oil Dressing

Ingredients:

1 can (15 oz / 425g) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1/4 red onion, thinly sliced

1/2 cup crumbled feta cheese

1/4 cup Kalamata olives, halved

2 tablespoons chopped fresh parsley

2 tablespoons chopped fresh mint

2 tablespoons extra virgin olive oil

1 tablespoon lemon juice

1 teaspoon red wine vinegar

1/2 teaspoon dried oregano

Salt and black pepper, to taste

Directions:

In a large mixing bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, parsley, and mint.

In a small bowl or jar, whisk together olive oil, lemon juice, red wine vinegar, oregano, salt, and pepper.

Pour the dressing over the salad and toss gently to combine.

Add crumbled feta and toss again lightly.

Chill for 10–15 minutes before serving, or serve immediately for a fresh bite.
