    Crispy Bang Bang Chicken Bites with Sweet and Spicy Sauce

    Ingredients:

    1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

    1/2 cup buttermilk

    1/2 cup cornstarch

    1/2 cup all-purpose flour

    1/2 teaspoon salt

    1/2 teaspoon black pepper

    Vegetable oil for frying

    For the Bang Bang Sauce:

    1/2 cup mayonnaise

    1/4 cup sweet chili sauce

    1 tablespoon sriracha (or more to taste)

    1 tablespoon honey

    1 teaspoon rice vinegar

    Directions:

    Place chicken cubes in a bowl with buttermilk and let marinate for 15–30 minutes.

    In another bowl, mix cornstarch, flour, salt, and pepper.

    Heat vegetable oil in a deep skillet over medium-high heat until hot (350°F/175°C).

    Dredge each chicken piece in the flour mixture and shake off excess.

    Fry chicken in batches, about 3–4 minutes per side, until golden and cooked through. Transfer to a paper towel-lined plate.

    Salt and pepper to taste

    1 tablespoon honey

    1 tablespoon lime juice

    For the Fried Rice:

    2 cups cooked and cooled jasmine rice (preferably day-old)

    2 tablespoons sesame oil

    2 eggs, lightly beaten

    1/2 cup frozen peas and carrots

    1/4 cup green onions, chopped

    2 cloves garlic, minced

    2 tablespoons soy sauce

    1 tablespoon oyster sauce (optional)

    Directions:
