    Crispy Italian Chicken Milanese with Lemon and Arugula

    Ingredients:

    4 boneless, skinless chicken breasts

    Salt and freshly ground black pepper, to taste

    1 cup all-purpose flour

    2 large eggs

    1 tablespoon water

    1 1/2 cups Italian-style breadcrumbs

    1/2 cup grated Parmesan cheese

    1 teaspoon garlic powder

    1 teaspoon dried oregano

    1/2 cup olive oil, for frying

    2 cups fresh arugula

    1 lemon, sliced for garnish

    Fresh parsley, chopped for garnish

    Directions:

    Place chicken breasts between two sheets of plastic wrap and gently pound to about 1/4 inch thickness. Season both sides with salt and pepper.

    Set up three shallow dishes: one with flour, one with beaten eggs mixed with water, and one with breadcrumbs mixed with Parmesan, garlic powder, and oregano.

    Dredge each chicken breast first in flour, shaking off excess, then dip in the egg mixture, and finally coat with the breadcrumb mixture, pressing gently to adhere.
