Shrimp and Hominy Casserole
Creamy Shrimp & Hominy Bake with Cheddar and Peppers
Ingredients:
1 pound medium shrimp, peeled and deveined
2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
1 red bell pepper, chopped
1 (15-ounce) can white hominy, drained and rinsed
1 cup frozen corn (optional)
1/2 cup sour cream
1/2 cup milk
1 teaspoon smoked paprika
1/2 teaspoon cumin
Salt and pepper to taste
1 1/2 cups shredded sharp cheddar cheese, divided
2 tablespoons chopped fresh cilantro (optional)
Juice of 1/2 lime
1/2 cup crushed tortilla chips (optional topping)
Directions:
Preheat the oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat. Sauté onion and garlic for 2–3 minutes until softened.
Add chopped red bell pepper and cook for another 3 minutes.
Stir in the shrimp and cook just until they turn pink, about 2–3 minutes. Remove from heat.
In a large bowl, mix together hominy, corn, sour cream, milk, paprika, cumin, salt, pepper, lime juice, and 1 cup of the cheddar cheese.
Fold in the cooked shrimp and vegetables.
Pour the mixture into a greased 9x13-inch baking dish.
Top with the remaining 1/2 cup of cheese and crushed tortilla chips if using.
Bake for 20–25 minutes or until bubbling and golden on top.
Garnish with fresh cilantro before serving, if desired.
