    Spiced Yogurt-Marinated Chicken with Aromatic Herbs and Lemon

    Ingredients:

    1 lb (450g) boneless, skinless chicken thighs or breasts

    1 cup plain Greek yogurt

    2 cloves garlic, minced

    1 tablespoon grated fresh ginger

    1 tablespoon lemon juice

    1 teaspoon ground cumin

    1 teaspoon ground coriander

    1/2 teaspoon paprika

    1/2 teaspoon turmeric

    1/4 teaspoon cayenne pepper (optional)

    1 tablespoon olive oil

    Salt and pepper, to taste

    Fresh cilantro or mint, for garnish

    Lemon wedges, for serving

    Directions:

    In a bowl, whisk together yogurt, garlic, ginger, lemon juice, cumin, coriander, paprika, turmeric, cayenne (if using), olive oil, salt, and pepper.

    Add the chicken to the marinade, coating thoroughly. Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.

    Preheat grill, grill pan, or skillet over medium-high heat.

    Remove chicken from the marinade and cook for 5–6 minutes per side (depending on thickness), or until fully cooked and golden brown.

    Let rest for a few minutes before slicing. Garnish with fresh herbs and serve with lemon wedges.

    Flame-Grilled Chicken with Spicy Piri-Piri Marinade

    Ingredients:

    For the Chicken:

    4 bone-in, skin-on chicken thighs

    4 bone-in, skin-on chicken drumsticks

    2 tablespoons olive oil

    Salt and pepper to taste

    For the Piri-Piri Sauce:

    6 red chili peppers (such as bird’s eye), chopped

    4 cloves garlic, minced

    1/4 cup lemon juice

    1/4 cup red wine vinegar

    1/4 cup olive oil

    1 teaspoon smoked paprika

    1 teaspoon dried oregano

    1/2 teaspoon salt

    1/2 teaspoon ground black pepper

    Directions:

    In a blender or food processor, combine all sauce ingredients and blend until smooth. Set aside 1/2 cup of the sauce for serving.

    Place the chicken in a large bowl or resealable bag. Pour remaining Piri-Piri sauce over chicken and marinate for at least 4 hours, preferably overnight.

    Preheat grill or oven to 400°F (200°C).

    Remove chicken from marinade and pat lightly dry. Drizzle with olive oil and season with salt and pepper.

    Grill chicken for 25–30 minutes, turning occasionally, until skin is crispy and chicken is fully cooked (internal temp 165°F/74°C).
