    Traditional Romanian Mămăligă Pea Stew

    Ingredients:

    2 tablespoons vegetable oil

    1 onion, finely chopped

    2 cloves garlic, minced

    3 cups fresh or frozen green peas

    2 medium carrots, diced

    1 red bell pepper, chopped

    2 medium potatoes, peeled and diced

    4 cups vegetable or chicken broth

    1 teaspoon sweet paprika

    1/2 teaspoon dried thyme

    Salt and pepper, to taste

    1/4 cup fresh dill, chopped

    1 tablespoon tomato paste

    Directions:

    Heat oil in a large pot over medium heat. Add onion and garlic and sauté until translucent, about 4 minutes.

    Stir in carrots, red bell pepper, and potatoes, cooking for 5 minutes.

    Add green peas, tomato paste, paprika, and thyme. Stir to combine.

    Pour in broth and bring to a boil. Reduce heat to low, cover, and simmer for 30 minutes, or until vegetables are tender.

    Season with salt and pepper to taste.

    Stir in fresh dill before serving.
