Crispy Baked Cornflake-Crusted Chicken Tenders

Ingredients:

4 boneless, skinless chicken breasts or tenders

2 cups cornflakes, crushed

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Cooking spray or olive oil for greasing

Directions:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Place crushed cornflakes in a shallow bowl. In another bowl, mix flour with garlic powder, paprika, salt, and pepper.

Beat the eggs in a separate bowl.

Dip each chicken piece first into the flour mixture, then into the beaten eggs, and finally coat thoroughly with crushed cornflakes. Press gently to adhere.

Place the coated chicken pieces on the prepared baking sheet. Spray lightly with cooking spray or drizzle a little olive oil over them to promote crispiness.

Bake for 20-25 minutes or until the chicken is cooked through and the coating is golden and crispy. Turn halfway through cooking for even browning.

Serve hot with your favorite dipping sauce.
