Greek Chicken Kabobs
Marinated Greek Chicken Skewers with Fresh Herbs and Lemon
Ingredients:
2 lbs boneless, skinless chicken breasts or thighs, cut into 1.5-inch cubes
1/4 cup olive oil
Juice of 1 lemon
3 cloves garlic, minced
2 teaspoons dried oregano
1 teaspoon dried thyme
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
Salt and freshly ground black pepper, to taste
1 red onion, cut into chunks
1 green bell pepper, cut into chunks
1 red bell pepper, cut into chunks
Wooden or metal skewers (if wooden, soak in water 30 minutes before use)
Directions:
In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, cumin, paprika, salt, and pepper.
Add chicken pieces to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour, preferably 3-4 hours or overnight for best flavor.
Preheat grill or grill pan to medium-high heat.
Thread chicken cubes alternately with onion and bell pepper chunks onto skewers.
Grill kabobs for 10-12 minutes, turning occasionally, until chicken is cooked through and slightly charred on the edges.
Remove from grill and let rest for 5 minutes before serving.
