    Zesty Three-Bean and Herbed Quinoa Power Salad

    Ingredients:

    1 cup cooked quinoa

    1/2 cup canned black beans, rinsed and drained

    1/2 cup canned chickpeas, rinsed and drained

    1/2 cup canned kidney beans, rinsed and drained

    1 cup cherry tomatoes, halved

    1/2 cup red bell pepper, diced

    1/4 cup red onion, finely chopped

    1/4 cup fresh parsley, chopped

    2 tablespoons olive oil

    1 tablespoon red wine vinegar

    1 tablespoon lemon juice

    1 garlic clove, minced

    Salt and pepper to taste

    Optional: crumbled feta or avocado slices for topping

    Directions:

    In a large bowl, combine the cooked quinoa, black beans, chickpeas, kidney beans, cherry tomatoes, red bell pepper, red onion, and parsley.

    In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, garlic, salt, and pepper.
