    Sesame-Soy Chicken Noodles with Scallions and Crunch

    Ingredients:

    8 oz spaghetti or soba noodles

    2 cups cooked chicken breast, shredded or sliced

    1 tablespoon rice vinegar

    1 tablespoon honey or maple syrup

    1 tablespoon creamy peanut butter (optional for richness)

    1 clove garlic, minced

    2 scallions, thinly sliced

    1/4 cup chopped cilantro
