• Shrimp Fettuccine Alfredo

    Creamy Garlic Shrimp Fettuccine Alfredo

    Ingredients:

    12 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

    3 tablespoons unsalted butter

    4 cloves garlic, minced

    1 cup heavy cream

1 cup freshly grated Parmesan cheese

    1/2 cup whole milk

    1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

    2 tablespoons fresh parsley, chopped

    Lemon wedges, for serving

    Directions:

Cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup pasta water.

In a large skillet, heat olive oil over medium-high heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.

In the same skillet, melt butter over medium heat. Add garlic and sauté for about 1 minute until fragrant.

Pour in heavy cream and milk, stirring constantly. Bring to a gentle simmer.

Gradually whisk in the Parmesan cheese until the sauce thickens, about 3-4 minutes.

Add cooked fettuccine to the skillet and toss to coat in the Alfredo sauce. If the sauce is too thick, add reserved pasta water a little at a time to reach desired consistency.

Return the cooked shrimp to the skillet, mixing gently to combine and warm through.

Season with additional salt and pepper if needed.

Garnish with fresh parsley and serve immediately with lemon wedges on the side.
