    Tropical Shrimp with Fresh Mango Salsa

    Ingredients:

    1 pound cooked shrimp, peeled and deveined

    1 ripe mango, diced

    1/2 red bell pepper, diced

    1/4 red onion, finely chopped

    1 jalapeño, seeded and minced

    1/4 cup fresh cilantro, chopped

    Juice of 1 lime

    1 tablespoon olive oil

    Salt and pepper to taste

    Directions:

    In a large bowl, combine diced mango, red bell pepper, red onion, jalapeño, and cilantro.

    Add lime juice and olive oil, then season with salt and pepper. Mix well to create the salsa.

    Gently fold in the cooked shrimp until evenly coated with the salsa.

    Chill in the refrigerator for at least 15 minutes to allow flavors to meld.
