    Sweet & Savory Mongolian Chicken with Garlic Ginger Sauce

    Ingredients:

    1 lb boneless, skinless chicken breast or thighs, thinly sliced

    1/4 cup cornstarch

    2 tablespoons vegetable oil

    4 garlic cloves, minced

    1 tablespoon fresh ginger, grated

    1/2 cup low-sodium soy sauce

    1/2 cup water

    1/2 cup brown sugar, packed

    1 teaspoon rice vinegar (optional)

    1/4 teaspoon red pepper flakes (optional)

    2 green onions, chopped (for garnish)

    Sesame seeds (for garnish)

    Directions:

    Toss the sliced chicken in cornstarch until evenly coated. Shake off any excess.

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken in batches and fry until golden and crispy. Remove and set aside.

    In the same skillet, reduce heat to medium. Add garlic and ginger; sauté for 30 seconds until fragrant.

    Add soy sauce, water, brown sugar, vinegar (if using), and red pepper flakes. Bring to a simmer and let cook for 3–4 minutes until slightly thickened.

    Return the fried chicken to the skillet and toss to coat in the sauce. Cook for 2–3 more minutes until the sauce thickens and the chicken is glazed.

    Garnish with green onions and sesame seeds. Serve hot with steamed rice or noodles.
