    Zesty Lemon Garlic Butter Chicken Skewers

    Ingredients:

    1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes

    3 tablespoons unsalted butter, melted

    4 cloves garlic, minced

    Zest and juice of 2 lemons

    2 tablespoons olive oil

    1 teaspoon dried oregano

    Salt and freshly ground black pepper, to taste

    Fresh parsley, chopped (for garnish)

    Wooden or metal skewers (if wooden, soak in water 30 minutes before use)

    Directions:

    In a large bowl, whisk together melted butter, minced garlic, lemon zest, lemon juice, olive oil, oregano, salt, and pepper.

    Add chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour, preferably 2-3 hours for maximum flavor.

    Preheat grill or grill pan to medium-high heat.

    Thread the marinated chicken pieces onto skewers evenly.
