    Juicy Chicken in Georgian Sour Cherry Reduction (Chakhokhbili-Inspired)

    Ingredients:

    4 bone-in, skin-on chicken thighs

    Salt and black pepper to taste

    2 tablespoons olive oil

    1 medium onion, finely chopped

    2 cloves garlic, minced

    1/2 teaspoon ground coriander

    1/2 teaspoon paprika

    1/4 teaspoon ground cinnamon

    1 cup sour cherries (fresh or frozen, pitted)

    1/2 cup chicken broth

    1 tablespoon honey

    1 tablespoon red wine vinegar

    1/4 cup fresh cilantro or parsley, chopped (for garnish)

    Directions:

    Season chicken thighs with salt and pepper.

    Heat olive oil in a large skillet over medium-high heat. Sear chicken skin-side down until golden, about 5–6 minutes. Flip and cook another 5 minutes. Remove and set aside.

    In the same pan, reduce heat to medium. Add onions and sauté until soft and golden, about 5 minutes. Add garlic, coriander, paprika, and cinnamon; stir until fragrant, about 30 seconds.

    Add sour cherries, chicken broth, honey, and red wine vinegar. Bring to a simmer.

    Return chicken to the pan. Cover and simmer over low heat for 20–25 minutes, or until chicken is fully cooked and tender.

    Remove lid and simmer uncovered for 5 more minutes to thicken the sauce slightly.

    Serve warm, spooning the cherry sauce over the chicken. Garnish with fresh herbs.
