    2 eggs, beaten

    3/4 cup shredded coconut (unsweetened or sweetened)

    1/2 cup panko breadcrumbs

    Vegetable oil, for frying

    For the mango salad:

    2 ripe mangoes, peeled and diced

    1 cup cherry tomatoes, halved

    1/2 small red onion, thinly sliced

    1/2 red chili, finely sliced (optional)

    1/4 cup chopped fresh cilantro

    4 cups mixed salad greens

    For the dressing:

    2 tablespoons lime juice

    1 tablespoon fish sauce

    1 tablespoon honey

    1 tablespoon olive oil

    1/2 teaspoon grated ginger

    Directions:
