Mediterranean Chicken Bowls
Ingredients:
For the Chicken:
2 lbs boneless, skinless chicken breasts or thighs
1 tablespoon olive oil
1 teaspoon oregano
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Bowls:
2 cups cooked couscous
1 cup chopped cucumber
1/2 cup chopped red onion
1/2 cup chopped Kalamata olives
1/4 cup crumbled feta cheese
For the Cilantro Yogurt Sauce:
1 cup Greek yogurt
1/4 cup chopped cilantro
1 tablespoon lemon juice
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions:
Prepare the Chicken:
In a bowl, combine the olive oil, oregano, garlic powder, salt, and black pepper. Add the chicken and coat well with the marinade.
Heat a grill or skillet over medium-high heat. Cook the chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from heat and let rest for a few minutes before slicing.
Make the Cilantro Yogurt Sauce:
In a small bowl, mix together the Greek yogurt, chopped cilantro, lemon juice, minced garlic, salt, and black pepper. Stir until well combined. Set aside.
Assemble the Bowls:
In serving bowls, layer the cooked couscous, chopped cucumber, red onion, Kalamata olives, and crumbled feta cheese.
Top with sliced chicken and drizzle with the cilantro yogurt sauce.
