Doritos Taco Salad
Ingredients:
For the Salad:
1 lb ground beef (or ground turkey for a leaner option)
1 packet taco seasoning (or homemade seasoning mix)
1 head of iceberg lettuce, shredded (or 5 cups mixed salad greens)
1 cup cherry tomatoes, halved
1/2 red onion, finely chopped
1 cup shredded cheddar cheese (or Mexican blend cheese)
1 can (15 oz) black beans, drained and rinsed (optional)
1 cup sweet corn (canned, frozen, or fresh)
1-2 cups Doritos (Taco or Nacho Cheese flavor, lightly crushed)
For the Dressing:
1/2 cup sour cream
1/4 cup mayonnaise
2 tablespoons salsa (or taco sauce)
1 tablespoon lime juice (optional, for extra zing)
Salt and pepper, to taste
Instructions:
1. Cook the Ground Beef:
In a large skillet, brown the ground beef over medium heat. Break it up with a spatula as it cooks. Once browned, drain any excess fat.
Stir in the taco seasoning and follow the packet instructions (usually adding a bit of water). Let it simmer for a few minutes until the beef is well coated and the seasoning is absorbed. Remove from heat and set aside to cool slightly.
2. Prepare the Salad:
While the beef is cooling, shred the iceberg lettuce and place it in a large salad bowl.
Add the halved cherry tomatoes, chopped red onion, shredded cheese, black beans, and corn to the salad. Toss gently to combine.
3. Make the Dressing:
In a small bowl, mix together the sour cream, mayonnaise, salsa (or taco sauce), lime juice, salt, and pepper. Stir until smooth.
4. Assemble the Salad:
Add the cooked and slightly cooled ground beef to the salad and toss everything together.
Just before serving, add the crushed Doritos on top and drizzle with the dressing. Toss gently so the Doritos stay crispy.
5. Serve & Enjoy:
Serve immediately and enjoy this flavorful, crunchy, and satisfying taco salad!
