Honey Garlic Chicken Stir Fry 
This vibrant honey garlic chicken stir fry is the perfect mix of tender chicken, crisp vegetables, and a savory-sweet sauce served over a bed of fluffy rice. A quick and flavorful weeknight meal!

 Ingredients:
For the Stir Fry:
1 lb chicken breast, cut into bite-sized pieces
1 tbsp vegetable oil or sesame oil
2 cups snap peas (or green beans)
1 red bell pepper, sliced
1 cup carrots, julienned
1/2 onion, sliced
2-3 cloves garlic, minced
For the Sauce:
1/4 cup honey
1/4 cup soy sauce (low-sodium)
1 tbsp rice vinegar (or apple cider vinegar)
1 tbsp cornstarch mixed with 2 tbsp water
1/2 tsp ground black pepper
1 tsp fresh ginger, grated (optional)
 Instructions:
Cook the Chicken:

Heat vegetable oil in a large skillet or wok over medium-high heat.
Add the chicken pieces, season with a pinch of salt and pepper, and cook until golden brown and cooked through (about 5-6 minutes). Remove from the pan and set aside.
Stir Fry Vegetables:

In the same pan, add a bit more oil if needed. Toss in the garlic, onions, snap peas, carrots, and red bell pepper. Stir fry for about 3-4 minutes until the veggies are tender-crisp.
Make the Sauce:

In a bowl, whisk together honey, soy sauce, rice vinegar, cornstarch slurry, black pepper, and ginger.
Combine:

Add the chicken back into the pan with the vegetables. Pour the sauce over the mixture and stir to coat everything evenly.
Simmer for 1-2 minutes until the sauce thickens.
